First and foremost ... TJ Maxx! They've got all the best stuff for real cheap ... especially if you don't care about matching.
Now, here's what you need:
The basics:
Frying Pan (aka Saute Pan): Copper exterior, stainless steel interior. You get even cooking and quick transfer of heat.
Pots: Good to have at least one large cast iron (aka Dutch Oven). The rest can be All-Clads.
Perforated Pot: This is a pot with lots of holes in it. Should fit inside of one of your regular pots. Good for veges, potatoes, pasta, or anything you cook in water.
Deep Saute Pan (aka Sautoir): This is for when the family and friends are all coming over and you need to get some serious cooking done. Copper exterior, stainless interior.
For all your copperware, there's a company call Mauviel (France) that makes the best stuff, but it's not cheap. Also, remember that the heavier you cookware is, the better.
Just buy a top brand and your covered. La Creuset is used for braising because because it is ceramic. Any proper size pot will work for that assuming its a quality brand. I use All-Clad because its one of the best and easy to get. Dont worry so much about materials because most home cookware is made the same. Commercial grade pans are made completely different for a different purpose so most things like copper in consumer items is pretty much a gimmick. If you buy quality you already are getting the right material.
